Ingredients
Salad
- 4 cup(s) mixed greens
- 1 15.5-ounce can chick peas (aka garbanzo beans), drained and rinsed
- 1/2 cup(s) red cabbage, thinly sliced and chopped
- 1 cup(s) carrot, peeled and grated
- 4 Medjool dates, halved, pitted and chopped
- 4 ounce(s) aged cheddar cheese, thinly shaved
- 1 medium red apple, such as Empire, cored and chopped
- 1 medium green apple, such as Crispin, cored and chopped
- 16 shelled pistachio nuts, toasted and chopped
Apple Cider Drizzle
- 2 tablespoon(s) apple cider
- 2 tablespoon(s) apple cider vinegar
- 1/4 teaspoon(s) Dijon mustard
- 6 tablespoon(s) extra virgin olive oil
- 1/4 teaspoon(s) sea salt
- 1/8 teaspoon(s) fresh-ground black pepper
Instructions
Apple Cider Drizzle
- Combine all ingredients in a lidded jar and shake vigorously until blended and smooth. Shake again prior to serving.
Salad
- Wash and spin the mixed greens in a salad spinner. Set aside to dry.
- Make the Apple Cider Drizzle and set aside while preparing salad.
- Prepare the remaining salad ingredients, from chick peas through pistachios, and set aside. Once greens are dry, add them to salad serving bowl or arrange on four plates. Layer remaining ingredients over the greens, one at a time in order. After adding the toasted nuts, top with the drizzle.
