Honey Bleu Crunch


Every bite of this appetizer is one to enjoy fully. Honeycrisp apple slice, bleu cheese, caramelized onion, and cooked pancetta are so simple to make and are a beautiful pairing of ingredients that guests will ask you to make again and again. Savory and Crunchy!


  • 2 NY Honeycrisp apples, sliced into half-moons 1/8” thick
  • 1/4 cup crumbled bleu cheese
  • 1/2 cup caramelized onions* or caramelized onion jam
  • 1/4 cup cooked until crispy, finely diced pancetta or bacon
  • 1 tbsp. fresh chives, finely chopped


  1. Arrange apple slices in a single layer on a parchment-lined cookie sheet for easy clean-up.
  2. Top each slice with about one teaspoon of caramelized onion* or onion jam, then sprinkle one teaspoon of crumbled bleu cheese on top. Continue until all slices have been covered with caramelized onions and bleu cheese.
  3. Take a large spoonful of the cooked crispy pancetta and sprinkle lightly over the tops of the apple slices.
  4. Finish topping them off with freshly chopped chives. Transfer to a serving platter and serve.

*To caramelize onions: Thinly slice a small or medium cooking onion into 1-2-inch-wide strips and set aside. Heat 1 tbsp of cooking/olive oil and 2 tsps. of salted butter in a heavy-bottomed pan (cast iron also works well) on medium heat. Once the oil mixture is hot, toss sliced onions and stir to coat. Then turn heat to medium-low, stirring occasionally, until onions become a caramel brown color. Letting the onions cook down without stirring the pan too frequently is important. This step is what makes the onions turn into a caramel brown. Add some water to the pan if the onions are drying out. Hint: If the heat is too high, the onions will burn; if the heat is too low, the onions won’t brown. This process can take about 30-45 minutes, depending on the quantity of onions used.
