Ingredients

Blondies

  • 2 sticks unsalted butter, room temperature
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 1 cup New York State apples, peeled and diced into ½-inch pieces
  • 1 large New York State apple, thinly sliced
  • (Optional) ¼ cup Homemade Caramel Sauce

Homemade Caramel Sauce

  • 1 cup granulated sugar
  • 1/3 cup water
  • 2 Tablespoons salted butter
  • ¾ cup heavy cream

Instructions

  1. Preheat oven to 350° F. Spray a 9 x 13 baking pan with cooking spray.
  2. In a medium bowl, whisk together flour, cinnamon, salt, and baking powder.
  3. In a large bowl, beat butter and sugars on medium speed until light and fluffy (about 3-5 minutes). Add eggs and vanilla extract and beat until well combined.
  4. Gradually add flour mixture to batter and beat until smooth. Fold in diced apple pieces.
  5. Pour batter into baking pan and arrange apple slices on top. Bake for 20-25 minutes, or until an inserted toothpick comes out cleanly.
  6. Allow to cool completely before cutting into squares, then drizzle with Homemade Caramel Sauce if desired.

Homemade Caramel Sauce

  1. Add sugar to a heavy-bottomed saucepan, distributing evenly. Add water to sugar to moisten evenly. Cook sugar/water mixture over medium heat until it dissolves into syrup, about 3 minutes. Increase heat to medium-high and cook until caramel becomes caramel-colored, about 10 minutes.
  2. Immediately remove from heat and add heavy cream. Stir in butter until mixture is incorporated. Let cool to room temperature, then store in the refrigerator up to one month, in the freezer up to 3 months. Makes about 1 cup.
