Carrot Apple Salad

Crunchy, nutty, and sweet – this healthy little salad is a wonderful alternative to coleslaw and makes a great accompaniment to savory pork dishes.
Ingredients
- 1 cup shredded carrots
- 1 cup finely chopped apple
- 1/2 cup raisins
- 1/2 cup golden raisins
- 1 cup whole almonds
- 1/2 cup vegetable oil
- (optional) garnish with pomegranate arils and/or fresh mint leaves
Instructions
- Toss carrots, apple, all raisins, and almonds with oil in medium bowl. Season to taste with salt and pepper.
