Carrot Apple Salad

Crunchy, nutty, and sweet – this healthy little salad is a wonderful alternative to coleslaw and makes a great accompaniment to savory pork dishes.

    Ingredients

    • 1 cup shredded carrots
    • 1 cup finely chopped apple
    • 1/2 cup raisins
    • 1/2 cup golden raisins
    • 1 cup whole almonds
    • 1/2 cup vegetable oil
    • (optional) garnish with pomegranate arils and/or fresh mint leaves

    Instructions

    1. Toss carrots, apple, all raisins, and almonds with oil in medium bowl. Season to taste with salt and pepper.
