Apples, Sausage, Onion, and Leek Casserole

A versatile and tasty casserole – great for dinner or brunch!
Ingredients
- 2 cups leeks, rinsed thoroughly and finely sliced
- 1 Gala apple, sliced in wedges
- 1 green onion, finely sliced
- 1 Tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon red pepper flakes
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup (about I link) pork sausage, cut into coins after cooking
- 5 raw eggs
- 1/2 cup milk
- 1/4 cup heavy cream
- ½ cup pepper jack or cheddar cheese, grated
- 1 Tablespoon fresh basil, finely chopped
Instructions
- Preheat oven to 375 degrees F.
- Heat oil in a cast-iron or other heavy bottomed skillet on medium-high heat. Sauté the leeks, apples, and onions in olive oil with salt and pepper, red pepper flakes, and 1/8 teaspoon cayenne.
- When the leeks and onions are translucent, raise the heat to high and add the sausage and cook for 8-10 minutes or until browned. Remove cooked sausage from heat and allow to cool slightly, then slice into coins.
- In a separate bowl whisk the eggs together with the cream, milk, cheese, remaining cayenne pepper, and a pinch of black pepper and salt.
- Pour the egg mixture in a pie dish or quiche dish, then arrange sausage, leeks, apples, and onion mixture evenly over the top.
- Put dish in preheated oven and bake for about 30-35 minutes until eggs are completely set. Sprinkle with fresh basil and serve.
