Apple Country Bread

Ingredients

Bread

  • 2 cups New York State Empire apples pared and chopped
  • 1 cup sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1 teaspoon(s) vanilla
  • 2 cups flour
  • 1 teaspoon(s) baking powder
  • 1 teaspoon(s) baking soda
  • 1/2 teaspoon(s) salt
  • 1/2 cup chopped nuts
  • 1/3 cup dried cherries

Topping

  • 1 tablespoon(s) sugar
  • 1/4 teaspoon(s) ground cinnamon

Instructions

  1. Heat oven to 350F. Grease and flour 9x5x3 pan.
  2. Mix sugar, shortening, eggs, vanilla. Stir in flour, baking powder, baking soda and salt until smooth. Stir in apples, dried cherries and nuts. Spread in pan. Mix sugar and cinnamon. Sprinkle over batter. Bake until wooden pick inserted in center comes out clean, 50-60 minutes.
  3. Immediately remove from pan. Cool completely before slicing. Store tightly covered.
