Ingredients
- 4 medium apples, peeled, cored, and sliced
- 3 Tablespoons water
- 2 Tablespoons butter
- 1 teaspoon(s) cinnamon
- 1/3 cup sugar
- 1 Tablespoon + 1 teaspoon cornstarch
- 2 Tablespoons water
- 1 quart frozen vanilla yogurt, softened
- 1 teaspoon(s) cinnamon
- 1 package (12.3 oz.) frozen waffles
- 1/2 cup plus 2 tbsp. caramel topping
- 1/2 cup plus 2 tbsp. chopped pecans
Instructions
To make Apple Cinnamon Frozen Yogurt:
- Melt butter and cinnamon in a saucepan over medium heat, then stir in apples, sugar and 3 Tablespoons water. Cover and cook, stirring occasionally, for 4-6 minutes or until slightly softened.
- In a small dish combine cornstarch and 2 Tablespoons water. Stir into apples and continue to cook until apples are soft and filling is thickened. Let bubble 1 minute, then remove from heat and let cool. Add yogurt and additional cinnamon; stir to combine.
- Pour onto plastic wrap lined 9x13-inch pan. Freeze 8 hours or overnight. Before serving, thaw 5 minutes at room temperature. Cut into 12 pieces.
- Toast waffles according to package directions. Place a waffle onto an individual serving plate and top with a slice of the frozen Apple Cinnamon Ice Cream mixture. Drizzle with caramel topping and sprinkle with pecans. Enjoy!
