Apple and Herb Pasta Salad


New York apples may make this pasta salad your next favorite picnic dish. A cool, creamy dressing and flavorful herbs make this recipe light and satisfying.


  • 2 cups or 8 ounces whole wheat pasta (penne or macaroni)
  • 1 tart green and 1 tart red New York State apple, cored and chopped
  • ½ cup diced red onion
  • ½ cup mayonnaise
  • ¼ cup chopped fresh basil
  • 2 Tbsp. chopped fresh mint
  • 2 Tbsp. sugar
  • 2 Tbsp. sour cream
  • 1 Tbsp. white wine vinegar
  • 1 Tbsp. fresh lemon juice
  • 2 tsp. lemon zest
  • Salt and pepper to taste


  1. Cook pasta according to package directions. Let cool 10 minutes.
  2. In a large bowl, stir together all other ingredients. Toss with pasta and season salad with salt and pepper; chill until ready to serve.
