Apple and Herb Pasta Salad
Description
New York apples may make this pasta salad your next favorite picnic dish. A cool, creamy dressing and flavorful herbs make this recipe light and satisfying.
Ingredients
- 2 cups or 8 ounces whole wheat pasta (penne or macaroni)
- 1 tart green and 1 tart red New York State apple, cored and chopped
- ½ cup diced red onion
- ½ cup mayonnaise
- ¼ cup chopped fresh basil
- 2 Tbsp. chopped fresh mint
- 2 Tbsp. sugar
- 2 Tbsp. sour cream
- 1 Tbsp. white wine vinegar
- 1 Tbsp. fresh lemon juice
- 2 tsp. lemon zest
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Let cool 10 minutes.
- In a large bowl, stir together all other ingredients. Toss with pasta and season salad with salt and pepper; chill until ready to serve.
